Yields about five 10-inch crepes, or 10 small crepes.
- Grab a large bowl and stir together the flour and salt. Add in the eggs and whisk to combine.
- Slowly pour in the milk and whisk until you have a smooth, pourable batter.
- Heat a 12-inch nonstick skillet over medium heat. Let 1/2 tablespoon of butter melt in the pan.
- Pour some of the crepe batter into the pan and swirl it around to cover the entire bottom. Let the batter cook for one minute, or until the surface loses its shine. Carefully flip.
- Repeat until all the batter has been used. Melt butter in the pan for each pour of batter.
