For The Strawberry Spinach Salad

  • 3/4 Cup of Crumbled Feta Cheese
  • 3/4 Cup of Raw Pecans
  • 1 Quart of Strawberries
  • 1/2 Small Red Onion
  • 10 Ounces of Fresh Baby Spinach

For The Poppy Seed Dressing 

  • 1/8 Teaspoon of Black Pepper
  • 1/4 Cup of Balsamic Vinegar
  • 1/2 Teaspoon of Kosher Salt
  • 3 Tablespoons of Extra-Virgin Olive Oil
  • 1/2 Teaspoon of Dijon Mustard
  • 1 1/2 Tablespoons of Honey

Instructions

Step 1: To toast the pecans, you’ll need to preheat the oven to 350 degrees Fahrenheit.

Step 2: On an ungreased baking sheet, spread a single layer of pecans, and then place them into the oven to bake for eight to 10 minutes or until the pecans smell fragrant. NOTE: To check to see if the pecans are done, you can break a pecan in half to check if the center is tan.

Step 3: Transfer the pecans to a cutting board and roughly chop them.

Step 4: While preparing for the salad, place the sliced onions in a small bowl and let them soak in water. NOTE: This technique helps keep the flavor and remove the harsh bite of the onion.

Step 5: In a small mixing bowl, whisk together 1/4 cup of balsamic vinegar, 1 1/2 tablespoons of honey, 1/8 teaspoon of black pepper, three tablespoons of extra-virgin olive oil, 1/2 teaspoon of Dijon mustard, and 1/2 teaspoon of kosher salt.
