For The Strawberry Spinach Salad

  • 3/4 Cup of Crumbled Feta Cheese
  • 3/4 Cup of Raw Pecans
  • 1 Quart of Strawberries
  • 1/2 Small Red Onion
  • 10 Ounces of Fresh Baby Spinach

For The Poppy Seed Dressing

  • 1/8 Teaspoon of Black Pepper
  • 1/4 Cup of Balsamic Vinegar
  • 1/2 Teaspoon of Kosher Salt
  • 3 Tablespoons of Extra-Virgin Olive Oil
  • 1/2 Teaspoon of Dijon Mustard
  • 1 1/2 Tablespoons of Honey

Step 1: To toast the pecans, you’ll need to preheat the oven to 350 degrees Fahrenheit.

Step 2: On an ungreased baking sheet, spread a single layer of pecans, and then place them into the oven to bake for eight to 10 minutes or until the pecans smell fragrant. NOTE: To check to see if the pecans are done, you can break a pecan in half to check if the center is tan.

Step 3: Transfer the pecans to a cutting board and roughly chop them.

Step 4: While preparing for the salad, place the sliced onions in a small bowl and let them soak in water. NOTE: This technique helps keep the flavor and remove the harsh bite of the onion.

Step 5: In a small mixing bowl, whisk together 1/4 cup of balsamic vinegar, 1 1/2 tablespoons of honey, 1/8 teaspoon of black pepper, three tablespoons of extra-virgin olive oil, 1/2 teaspoon of Dijon mustard, and 1/2 teaspoon of kosher salt.

Step 6: Drain the onions.

Step 7: Place the spinach in a large bowl and add the strawberries and onions. Drizzle half of the dressing, then toss the salad to coat the spinach leaves. NOTE: You want to ensure the leaves are well coated but now soaked. Add the necessary amount of dressing that meets your needs.

Step 8: Top the salad with feta and pecans, then lightly toss the salad to combine. NOTE: For the best-textured feta cheese, then purchase block-style feta.

Step 9: Enjoy!

When you’re ready to make this yummy treat, head to the store to grab all the necessary ingredients. You can change up the measurements to suit your preferences or keep things fresh, and if you’re not a pecans fan, then you can swap them out for silvered almonds or chopped walnuts; make sure they are toasted because it’s so much more flavor with every bite. If you have a nut allergy, consider trying sunflower seeds; they provide the perfect crunch you need for a good salad.
